Roosting up on the seventh floor of the luxurious The Outpost Hotel is restaurant and poolside day club, 1-V:U. Offering a bird's eye view of Sentosa's warm orange sunsets, Palawan Beach and the Singapore Straits, the lifestyle destination is where you can party from dusk till the early morn to the tunes of resident DJs Sherpa and Kaylova. Kick up your feet on the turquoise sunbeds by the infinity pool as you sip on tropical cocktails or retreat indoors for dinner prepared by a star team led by local chef Ace Tan.
The restaurant alcove serves progressive Asian cuisine, with a sharing menu split between Terra (land) and Aqua (sea). From the land comes a glazed beef flat iron steak ($48/$88) served with an assortment of leaves and pickles for you to wrap your own delicious morsel – Korean-barbecue style – a dish inspired in part by chef Ace's time as the executive sous chef of Flowerchild Restaurant in Seoul. Then there's the controversial french beans and winged beans hot salad ($16) covered in sticky Japanese natto and Indonesian bumbu sauce. If you're not a fan of slimy food, you might want to give this a miss. But the toasty mix of spices may also warm you up to this dish. Given your beachfront location, something from the sea would be fitting. Don't miss the red snapper fillet ($38/$70) that comes swimming in a pool of luscious garlic shoot beurre blanc sauce, studded with homemade XO and pickled myoga.
If you're not fond of sharing (and with plates this good, we don't blame you), you might want to give the tasting menu ($98) a try. Chef Ace serves five to seven courses that trace his Asian cooking heritage. A taste of what to expect: Granny's Ngo Hiang 2.0, chef's take on his grandmother's recipe, where five-spice seasoned minced pork roll is steamed instead of deep-fried and topped with a delicate sliver of fried housemade yuba.
